Our Level 5 restaurant and lounge team is proud to serve culturally alive, community-fused and environmentally sound cuisine that showcases local and regional ingredients.
Our team at Level 5 is honored to serve culturally alive, community-fused, and environmentally sound cuisine. Dishes at Hotel Chaco are seasonal and built around a core of native New Mexican and Latin American ingredients with an international flair.
We carefully source ingredients regionally and responsibly or in support of community cooperatives. The cultures celebrated at Chaco understand humanity’s role as Earth's stewards and we strive to maintain that in our restaurant.
Level 5 is on the fifth floor and rooftop of our Albuquerque resort, and is named in homage to Chaco Canyon’s Pueblo Bonito, which had five levels. Its rock and beam design evokes a protected feeling like that felt at Chaco Canyon with carefully framed views.
Hotel Chaco is proud to welcome a new Executive Chef at our new restaurant in Albuquerque. Born in Paris, Monchâtre began his career in his family owned restaurant in the Loire Valley, France. He brings to Level 5 the experience of leading top restaurants in California, Italy, Germany, and Mexico. Winner of “Chef of the Year” & “Medal of the Chevalier of Merit,” he is also a member of Academie Culinaire de Françe. We invite you to come taste his sophisticated new menu.

Our cuisine at Level 5 showcases local, regional, and carefully sourced ingredients. Dinner menus at our restaurant in Albuquerque, NM frequently change as we harvest new ingredients from our Chaco Garden. See menu links below.
Located beside Hotel Chaco, the garden is a living part of the kitchen at Level 5 where ingredients begin their journey to the plate. From turnips, bronze fennel and eggplant, to varieties of tomato, basil, sage and thyme, each ingredient is grown and harvested for an intended purpose. The garden’s natural progression informs upcoming menus. Visual growth in the garden fosters a respect for and personal investment in the creation of each item Level 5 serves.
