Our team at Level 5 is honored to serve culturally alive, community-fused and environmentally sound cuisine. Dishes are seasonal and built around a core of native New Mexican and Latin American ingredients yet with an international flair and flavors.

We carefully source ingredients regionally and responsibly or in support of community cooperatives. The cultures celebrated at Chaco understand humanity’s role as Earth's stewards; we strive to maintain that in our restaurant.

Level 5 is on the fifth floor and rooftop of Hotel Chaco and named in homage to Chaco Canyon’s Pueblo Bonito, which had five levels. Its rock and beam design evokes a protected feeling like that felt at Chaco Canyon with framed views.

Level 5 accommodates guest upon arrival and only takes reservations for overnight hotel guests or parties of 15 or larger. Hotel guests may call 505-318-3998....

Chaco Garden

Located beside Hotel Chaco, the garden is a living part of the kitchen at Level 5 where ingredients begin their journey to the plate. From turnips, bronze fennel and eggplant, to varieties of tomato, basil, sage and thyme, each ingredient is grown and harvested for an intended purpose. The garden’s natural progression informs upcoming menus. Executive Chef Patrick Mohn

Executive Chef Patrick Mohn was raised on a ranch in Waldo Gulch between Madrid and Cerrillos on New Mexico’s Turquoise Trail. Food has always been central to his identity. He studied in the Scottsdale Culinary Institute's Le Cordon Bleu Program. He joined the Hyatt Regency Tamaya as an intern and quickly became sous chef at its Santa Ana Café. In 2012, he returned to Tamaya as Executive Sous Chef where he won a regional cooking competition in San Diego, placed second nationally at the first Hyatt Good Taste Series in Maui, was a guest chef at the James Beard House in Manhattan, and represented New Mexico in the 2014 Great American Seafood Cookoff. He returned to Hyatt Regency Albuquerque as Executive Chef in 2016. He currently oversees Hyatt and Hotel Chaco kitchens as regional chef.read more
